Caviar

CAVIAR (STURGEON)
Caviar is salted fish eggs from Sturgeon species (fish of the Acipenseridae family). The most famous caviar comes from the Beluga Sturgeon (Huso huso) of the Black Sea and Caspian Sea. Caviar also comes from 2 Sturgeon species which are found in British waters, the European Sturgeon (Acipenser sturio) which is Criticially Endangered and the Atlantic Sturgeon (Acipenser oxyrinchus) which is Near Threatened. Sturgeon have been highly prized for many centuries and they were declared a “royal fish” by Edward II in 1323. Sturgeon populations across the world are in danger and the UK Sturgeon Conservation Strategy and Action Plan was published in May 2023 by the UK Sturgeon Alliance.
